Barrette alle mele con crumble alle mandorle - Apple bars with almond crumble



Both Italian and English version
Ingredienti (per 36 barrette):
per la base
250 gr. di farina 00

100 gr. di burro freddo, tagliato a piccoli pezzi
60 gr. di zucchero di canna o zucchero bianco

un uovo piccolo
un pizzico di sale
per il ripieno
40 gr. di burro
50 gr. di zucchero di canna o zucchero bianco
5 mele golden

2 cucchiai di miele
1 cucchiaio di acqua
1 cucchiaino di cannella

per il crumble
120 gr. di mandorle a lamelle
150 gr. di farina

150 gr. di burro fuso
100 gr. di zucchero

1 cucchiaino di cannella
un pizzico di sale


Preparazione:

Preriscaldare il forno a 180°C. Foderare con carta forno una teglia rettangolare (la mia 36x24). 
 Sbucciare le mele, togliere il torsolo e fare delle fettine sottili. In una padella, sciogliere il burro con lo zucchero ed il miele e l'acqua ed aggiungere le fettine di mela spolverizzate con la cannella.

Cuocere a fuoco basso fino a che le mele si saranno ammorbidite (circa 15 minuti).
Nel robot da cucina mescolare tutti gli ingredienti per la base fino ad ottenere un impasto di briciole.

Versare le briciole nella teglia, pressarle con le mani per avere una base uniforme. 

Infornare, per 10 minuti (fino a leggera doratura ai bordi).
Nell'attesa che la base sia pronta,  preparare il crumble mescolando le mandorle a lamelle, la farina, lo zucchero, il miele, la cannella , il sale ed il burro per ultimo. Impastare velocemente con le mani per creare il crumble.

Distribuire le mele sulla base, e ricoprire con il crumble, pressando leggermente con le mani.


Cuocere per 40 minuti (il crumble dovrà essere dorato). Una volta freddo, tagliare a barrette (3cmx8cm).











English version

Ingredients (for 36 bars):
for the base250 grams  of all purpose flour
100 grams  of unsalted butter (little pieces)
60 grams of sugar (brown or white)

1 egg (small)
1 tsp of salt

for the filling
40 grams of butter (liquefied)
50 grams of sugar (brown or White)
4 apples, peeled, cored and cut to small slices

2 tbsp of honey
1 tbsp of water
1 tsp of cinnamon
for the crumble
120 grams of almonds (cut lenghtways, thin layer)
150 grams of all purpose flour

150 grams of butter  (liquefied)
100 grams of sugar

1 tsp of cinnamon
a pinch of salt


Directions:

Preheat oven 180°C. Line a 36cm x24 cm  baking dish with foil. 

Combine the apples with butter, honey, sugar water and cinnamon.

Cook over low heat for 15 minutes, until apples are tender but still firm.
Nel robot da cucina mescolare tutti gli ingredienti per la base fino ad ottenere un impasto di briciole.
Put all the ingredients to make the base in a medium bowl, use a pastry blender, two forks or your hands, until it resembles breadcrumbs.

 Press the mixture into the bottom of the prepared pan.

Bake for 10-12 minutes, until lightly browned around the edges. Remove from the oven. Top with the cooked apple mixture.
In a medium bowl combine all ingredients for the topping. Mix well until combined and crumbly. 

Sprinkle over the apple layer.Press with hands.


Bake for 40 minutes or until golden brown. Remove from the oven and allow to cool. Using the foil, lift out of pan. Cut into 3cm x 8cm bars and serve. (If desired, refrigerate before cutting to firm up a bit for easier slicing.)
