Besciamella - Bechamel sauce



Inizialmente la besciamella, nata in Toscana, era nota come salsa colla e fu importata in Francia da Caterina de' Medici. Il nome attuale fece la sua comparsa nel ricettario italiano del XV sec. conosciuto come La cucina Medicea, e in seguito venne reinterpretato alla corte francese nel Le cuisinier français ("Il cuoco francese", pubblicato nel 1651) di François Pierre (de) La Varenne (1615 - 1678,) cuoco di Nicolas Chalon du Blé, marchese d'Uxelles, il testo fondativo della cucina francese. Il nome aveva lo scopo di onorare il cortigiano Louis de Béchameil, marchese di Nointel (1603-1703). Il nome è cambiato nei secoli, passando dall'essere chiamata "salsa colla", "balsamella", fino all'attuale besciamella.

The sauce first appeared in some Italian cooking books of the Renaissance, but was introduced under its familiar name in Le Cuisinier François, published in 1651 byFrançois Pierre La Varenne (1615–1678), chef de cuisine to Nicolas Chalon du Blé, marquis d'Uxelles. The foundation of French cuisine, the Cuisinier François ran through some thirty editions in seventy-five years.

Margherite alla marmellata - Jam filled butter daisy cookies

Questi biscotti sono molto friabili e morbidi in prossimità della marmellata e diventano più morbidi e scioglievoli col passare dei giorni....ammesso che riusciate a resistervi....

These cookies are so crumbly and soft close to the jam, and even more some days later.....if you can resist to the temptation to eat them before....
