Cantucci - Cantucci cookies


Both Italian and English version

Ingredienti:
500 gr farina
200 gr mandorle non pelate (io uso quelle pelate)
200 gr zucchero
100 gr burro
4 uova
1 bustina di lievito per dolci
buccia di limone
sale
uovo per spennellare

Preparazione:
Setacciare la farina con il lievito, formare una fontana e versare al centro lo zucchero, il burro morbido a pezzetti, le uova, la scorza grattugiata del limone, un pizzico di sale e le mandorle intere.
Impastare bene tutti gli ingredienti (noi abbiamo usato l’impastatrice) fino ad ottenere un composto omogeneo.
Suddividere ora il composto in più parti uguali e da queste ricavare dei filoncini (vengono 6 filoncini di circa 40 cm x 5 cm). Trasferirli su una teglia rivestita con carta forno, spennellarli col tuorlo dell’uovo e farli cuocere in forno a 190° per circa 15/20 minuti. Il tempo di cottura varia a seconda delle dimensioni dei filoncini.
Trascorso questo tempo, estrarli dal forno, lasciarli raffreddare qualche minuto e tagliarli in digagonale a fettine di circa 1,5 cm di spessore.
Rimettere i biscotti nuovamente nella teglia e farli tostare in forno per circa 10/12 minuti, girandoli a metà cottura.
Una volta raffreddati si possono conservare in una scatola di latta anche per una settimana.

English version

Cantucci are very famous biscuits from Tuscany (one of the Italian regions, situated in the centre), with a dry texture, and are highly suitable to round off a meal as an accompaniment to fine “vin santo” wine. A dry biscuit suitable all year round.

Ingredients:
500 gr. all purpose flour
200 gr. unpeeled almonds (I use peeled)
200 gr. granulated sugar
100 gr. butter (softened at room temperature)
4 eggs
1 teaspoon baking powder
lemon zest
salt
1 egg yolk (for brushing)

Directions:


I use the kneading machine: 

Sift flour with baking powder, pour in the sugar, softened butter into small pieces, eggs, lemon zest, a pinch of salt. 
Mix all ingredients until the mixture is smooth; then  add almonds (remix for 2-3 minutes). 
Divide the mixture into equal parts and form the loaves (6 loaves are about 20 cm x 5 cm). Place the loaves  on a baking sheet lined with parchment paper, brush them with egg yolk and cook in the oven at 190 degrees for about 15-20 minutes (cooking time varies depending on the size of the loaves). 
After this time, remove them from the oven, let cool a few minutes and cut diagonally into 1.5 cm slices. 

Return to the oven for a few minutes until crunchy on both sides .
Once cooled you can conserve cantucci in a tin for a week.
