Torta magica al cacao - Cocoa magic cake




Both Italian and English version

Ingredienti:500 ml di latte intero tiepido

150 grammi di zucchero
125 grammi di burro
65 grammi di farina
50 grammi di cacao amaro
4 uova grandi a temperatura ambiente
1 cucchiaio di acqua calda (15ml)
1 cucchiaino di estratto di vaniglia
1 cucchiaino di succo di limone
20 grammi di zucchero a velo (per la superficie)

Preparazione:
Preparare lo stampo (20x20) che dovrà essere imburrato e rivestito bene con carta da forno adagiandola in modo curato. 
Accendere il forno a 160° statico (per ottenere una netta differenziazione tra lo strato base e lo strato intermedio - più cremoso - meglio abbassare a 150° ma ciò dipende dal proprio forno).
Sciogliere il burro (a bagnomaria o nel microonde), poi scaldare il latte (a fuoco basso o nel microonde) con l'estratto di vaniglia (non deve bollire, il latte dovrà essere poco più che tiepido).
Separare i tuorli dagli albumi. Montare gli albumi a neve ferma con un il succo di limone e tenere in frigorifero fino a quando non verranno utilizzati.
Nella planetaria montare i tuorli con lo zucchero fino ad ottenere un composto gonfio e spumoso e sempre sbattendo, unire il cucchiaio di acqua calda.

oco alla volta il burro ormai freddo. Setacciare la farina ed il cacao insieme e unire al composto nella planetaria facendo attenzione a non formare grumi. poi aggiungere il latte tiepido poco alla volta. Spegnere la planetaria e incorporare gli albumi al composto mescolando delicatamente con una frusta mescolando dal basso verso l'alto facendo in modo di non smontarli. Il composto finale risulterà piuttosto liquido.
Versare nello stampo e cuocete in forno per circa 60-70 minuti fino a che la superficie non sarà bella dorata. A cottura ultimata, estrarre dal forno, lasciare raffreddare completamente a temperatura ambiente, poi ricoprire con pellicola alimentare e lasciare in frigorifero per almeno tre ore prima di servire.
Servire tagliata a cubetti (4x4) spolverati con abbondante zucchero a velo.

English version

Ingredients:
500 ml milk, at room temperature
150 grams of caster sugar
125 grams of butter
65 grams of plain flour
50 grams of unsweetened cocoa powder
4 eggs at room temperature
1 tbsp of water
1 tsp of vanilla extract
1 tsp of lemon juice
20 grams of cenfectioners' sugar (for the surface of the cake)



Directions:
Preheat the oven to 160°C (to get a clear separation between the base layer and the middle layer - creamy - it is better to bake the cake at 150 ° but this depends on your oven).
Line a 20cmx 20cm tin with baking paper.
Melt the butter (in a double boiler or in the microwave) then heat the milk (low heat or in microwave) with vanilla extract (do not boil, the milk should be a little more than lukewarm).
Separate the yolks from the whites. Beat the egg whites until stiff with lemon juice, using a whisk and then put in the refrigerator until you are using again.
Beat the egg yolks with the sugar and water until the mixture whitens.
Add the flour, cocoa and salt. Beat for a few minutes more. Pour in the milk little by little, whisking constantly.

Pour in the egg whites into the mixture, stirring gently with a whisk, stirring from the bottom up being sure not to dismantle them. The final mixture will be quite liquid.

Pour into the tin and bake in the oven for about 60-70 minutes until the surface is golden brown. When cooked, remove from the oven, allow to cool completely at room temperature, then cover with plastic wrap and leave in refrigerator for at least three hours before serving.
Turn out the cake then cut into small squares (4cm x4cm). Sprinkle with confictioners' sugar.
